3/4 cup olive oil
1 packet stevia or 1 tbsp honey hot honey is a great twist for those who like a little kick
3/4 cup apple cider vinegar
1/2 tsp each salt & pep (optional)
1 can of each: white corn, black beans, kidney beans, pinto beans, canelli beans, black eyed peascan leave out the corn for allergies or if don’t want the starch
1 each red, yellow and orange pepper cut up tiny
1/2 cup celery
1/2 cup red onion (optional)
1 small tomato or 10 grape tomatoes cut up
1 med jalapeno pepper (optional)
Eat with tortilla chips or over leafy greens

Drain 1 can each of white corn, black beans, kidney beans, pinto beans, canelli beans, black eyed peas and place in bowl.

Cut up 1 each red, yellow and orange pepper, celery, red onion, tomato, jalapeno pepper into bowl

Mix beans and veggies pour oil, vinegar, stevia (or honey), salt & pepper over beans & veggies

Refrigerate until served
