Stovetop Salmon Stew

2 lbs of Wild Salmon
1 Tbsp minced garlic
2 Cans of strained & pressed artichokes (or 2 fresh artichokes)
1 lb Fresh spinach
16 oz diced tomatoes
salt & pepper, oregano, red pepper to taste
Olive oil

Heat olive oil in skillet & add minced garlic.

Add wild salmon - turn over and break up as it browns (about 6-8 min/side).

While Salmon is cooking add in artichokes and spinach.

Allow to simmer and continue to mix.

Add in tomatoes and seasonings to taste (makes a "stew").

Place over Quinoa or fresh spinach.
(*leftovers are yummier so don't throw out extra!)
