Chickpea Salad

2 tsp first cold pressed olive oil
2 tbsp minced garlic (or 2 cloves minced)
1 can rinsed (bpa free- Eden brand) canned chick peas
1 big handful fresh baby spinach
2 tbsp GF bread crumbs
0.50 tsp paprika
0.25 tsp red pepper flakes
0.50 tsp sea salt
0.25 tsp stevia
1 tsp apple cider vinegar
1Heat oil in a skillet over medium heat.
2Add garlic and spinach and saute until spinach is wilted. (About 2-3 minutes)
3In a medium bowl, combine chickpeas, breadcrumbs, paprika, pepper flakes, salt and stevia.
4Add chickpea mixture to spinach and cook until heated. (About 3-4 minutes)
5Remove from heat and stir in apple cider vinegar - ENJOY!
