Sweet Potato Quinoa Falafel

1 cup quinoa
1 yam or sweet potato
2 tbsp. organic milk (milk alternatives)
4 cloves garlic
1 tbsp. fresh parsley, chopped
1 tbsp. fresh cilantro, chopped
1 tbsp. onion powder
1 tbsp. cumin
1 tsp. coriander
2 tbsp. chickpea flour
3 tbsp. quinoa flakes
½ tsp. salt
Sesame seeds (optional)
1Preheat oven to 350 degrees.
2Cook sweet potato by steaming, baking or broiling. (I baked mine for about 50 minutes at 375 degrees).
3Once potato has cooled, scoop out inside into a large bowl.
4Add milk and using potato masher or fork mash well.
5Put garlic, parsley, cilantro, onion powder, cumin, coriander, chickpea flour, quinoa flakes and salt in a food processor.
6Process until you have a crumbly mixture.
7Add to potato and mix until combined.
9Form into tbsp. sized balls and place on a parchment lined baking sheet that has been sprayed with cooking oil.
10Sprinkle with sesame seeds.
12Flip and respray and bake for another 15 min.
