Gluten-Free Pad Thai
Rice noodles
1/3 cup of lime juice
1/3 cup of water
3 tbsp. gluten-free fish sauce
1 tbsp. gluten-free rice vinegar
1 tbsp. sugar
1 tbsp. gluten-free sweet chili sauce
1 tbsp. oil
1 shallot
2 garlic cloves

Boil rice noodles.

Toss all ingredients with noodles.

Add ¼ cup unsalted roasted peanuts, 2 cups of bean sprouts, and 4 scallions, thinly sliced.

Scramble 2 eggs- heat skillet- make an egg pancake.

Slice it up and add to dish.
