Chocolate Protein Banana Muffins

 1 cup chocolate protein powder (check ingredients for amount of sugar & to avoid aspartame, phenylalanine, splenda and Sucrolose)
 0.25 cup sugar
 0.33 cup butter softened
 2 eggs or 3 egg whites (vegan alternatives)
 0.25 tbsp apple sauce (check ingredients to avoid HFCS)
 1 tbsp stevia
 4 Ripe bananas
 1 cup (gluten free) flour
 1 cup (gluten free) oats
 1 tsp aluminum free baking soda
 0.50 tsp salt
 0.25 tsp baking powder
 0.50 cup chopped nuts (optional)

Heat oven to 350

Grease bottom of muffin tins with coconut oil or butter- shake flour lightly on pans to coat or use baking cups for ease

Mix all ingredients in bowl with mixer until mostly smooth except banana chunks

scoop into muffin tins

Bake for 12-15 minutes until toothpick comes out clean

Makes 30 mini-muffins or 15 regular muffins

Let cool before removing
