Kale Salad

 1-2 large bunch fresh, kale, preferably organic
 2 tbsp Apple cider vinegar
 1-1.5 Tbsp olive oil
 1 Tbsp lemon juice, freshly squeezed
 1 tsp fresh or minced garlic
 1/2 - 1tsp Sea salt to taste
 1/3 cup pumpkin seeds (or try with crushed, lightly roasted almonds or sunflower seeds) (*optional)
 1 large apple, sweet variety such as Gala or Honey Crisp, unpeeled and finely chopped (*optional)
 1/2 ripe large avocado, peeled, core, and cut into chunks (*optional)

Wash and dry kale well and strip leaves from heavy stems (reserve stems for use in a future soup or stew).

Bunch all leaves together and rip into small pieces

Mix kale well with oil, and lemon, garlic and salt then massage the mixture for 1-2 minutes (your clean hands are the only effective tools for this task - massage well - really using your muscles to break down the kale to reduce bitterness)).

Add remaining optional ingredients to taste and stir well.

Ideally allow mixture to sit for 30 minutes to allow kale to wilt and flavors to mingle (*next day is even tastier)
Should last in the fridge up to 4-5days
