Preheat the oven to 400°.
Slice the sweet potatoes into wedges (or thick rounds, if you like).
Put the sweet potatoes into a large bowl.
Drizzle them in olive oil, some salt, pepper, paprika.
Toss in Cilantro
Put the sweet potatoes onto a baking sheet and bake until the edges are crisp and the middle tender, about 20 minutes.
Drizzle fresh lime juice and some fresh cilantro over the top.
