Heat oil in nonstick skillet over medium heat. Chop onion, zucchini, bell pepper and garlic.
Add chopped veggies and sausage to skillet and saute’ for about 5 minutes.
Add quinoa and toss to coat, about 2 minutes.
Add broth and tomatoes and bring to a boil, then reduce and simmer, covered, for 10 minutes.
Add sausage or shrimp and cover the skillet with a lid. Cook for another 5-10 min. Top with green onions, salt and pepper.
