Mexican Halibut Bake

 0.25 cup coconut oil, melted
 2 skinnless hallibut fillets
 lemon pepper to taste
 0.75 cup salsa
 1.25 cups plain organic greek yogurt
 1 tbsp garlic oil

Preheat oven to 350 degrees F (175 degrees C).

Pour the oil in the bottom of a baking dish.

Arrange the halibut fillets in the dish, and season with lemon pepper.

In a bowl, mix the salsa, yogurt and garlic oil.

Spoon over the halibut fillets.

Bake halibut 30 minutes in the preheated oven, or until easily flaked with a fork.

Notes: recipe called for butter - substituted coconut oil recipe called for sour cream and mayonaise- substituted greek yogurt
