Lentils Ole Recipe

 1 cup lentils
 3 cups water
 1 tbsp olive oil
 0.50 cup chopped onion
 0.50 cup green pepper
 0.50 cup red pepper
 1 tbsp chili powder
 0.50 tsp cummin seeds, crushed
 4 cloves minced garlic
 12 tbsp red wine vinegar
 1 8 oz. can tomato sauce
 1 tbsp molasses

Bring the lentils and water to a boil, then cover and simmer for about 25- 30 minutes until soft but not mushy; strain if there is liquid left over.

While lentils cook, sauté onions, peppers, garlic, chili powder and cumin in 1 tbsp/ oil until the vegetables are limp (about 2 min.).

Add tomato sauce, vinegar and molasses, cook for 1 minute; taste and add more vinegar if needed.

Add mixture to lentils and cook until heated through.
