Warm Grain Free Sweet Potato Muffins

0.50 cup mashed sweet potato (about 1.5-2 large potatoes
0.25 cup unsweetened shredded coconut (optional)
0.25 cup raisins
0.50 cup chopped walnuts
3 tbsp REAL honey (none of that teddy bear stuff!!)
3 eggs (egg substitute)
1 tsp almond flour
1 tsp cinnamon
1 tsp vanilla extract
1 tsp baking powder

Preheat oven to 350F

Combine all ingredients and blend well

Divide Batter into six paper muffin cups

Bake 28-30 minutes or until muffins are cooked all the way through
