 2 tbsp of your fat of choice (coconut oil, olive oil, butter, ghee, etc.) melted
 1 large sweet potato or yam, diced
 1 tsp fine sea salt
 34 chicken apple sausages, diced
 0.50 yellow onion, diced
 2 chopped spinach
 10 eggs, whisked
 0.50 tsp garlic powder

Preheat oven to 400F

Grease a 9X12 baking dish

Toss diced sweet potatoes in your choice of fat and sprinkle with salt

Place sweet potatoes on baking sheet and bake for 20-25 minutes, until soft

While sweet potatoes are cooking, place a large sautee pan over medium heat

Add sausage and yellow onion

Cook until no pink remains in the meat

Place meat mxiture in a baking dish, add sweet potatoes and spinach

Then, add eggs, salt, and garlic powder and mix well

Place in the oven and bake for 25-30 minutes, until eggs are set in the middle
